Frantzén is the only restaurant in Sweden ever to hold three Michelin stars — and it got there by walking away from two.

The first dining room

The restaurant opened in 2008 in Gamla Stan, Stockholm's old town, under the name Frantzén/Lindeberg — Björn Frantzén in the kitchen alongside the pastry chef Daniel Lindeberg. The room was famously tiny. Guests were close enough to the pass that the distinction between dining room and kitchen barely held.

Two Michelin stars followed within about two years of opening. By the time the name was shortened to Frantzén, the restaurant was already appearing near the top of international lists and the old town address had become a pilgrimage for people who follow this kind of cooking.

It was also, by any measure, too small for what the kitchen wanted to do next.

The pause

Closing a two-star restaurant on purpose

In 2016 the restaurant closed at its Gamla Stan address while holding two stars. Restaurants at that level rarely stop voluntarily; the accolade is hard-won and easily lost in a move. The decision was made anyway, and there followed a gap of roughly a year while a new building was found and taken apart.

Why it matters. The closure is the hinge of the whole story. Everything the restaurant is now — the three floors, the movement between rooms, the aperitif in the loft — exists because the old room could not physically contain it.

The townhouse in Norrmalm

The restaurant reopened in the autumn of 2017 at Klara Norra Kyrkogata 26, on a quiet side street in the Klara district of Norrmalm, a short walk from Stockholm Central Station. The building is a nineteenth-century townhouse that was stripped back and rebuilt from the inside out.

The new premises run to more than five hundred square metres across three floors, with a terrace — roughly five times the floor area of the old address. The number of seats did not change. It is still twenty-three.

That ratio is the point. The extra space went into an entrance hall with ageing cabinets, a proper counter-facing dining room, a loft lounge, kitchens and back-of-house, rather than into more covers. It is why an evening here is a sequence of rooms rather than a single table.

February 2018

The third star

In February 2018, months after reopening, Frantzén was awarded three stars in the Michelin Guide — the first restaurant in Sweden to receive the guide's highest distinction. It has held them ever since, and as of the 2026 guide it remains the only Swedish restaurant at that level.

The inspectors' published summary describes an immersive evening: ring the bell to enter, take an aperitif in the top-floor lounge while the day's ingredients are explained, then move down to the counter to watch the cooking happen. The service, they note, runs like clockwork.
